Interesting recipes of arugula

Arugula is a lesser-known vegetable amongst the family of cruciferous vegetables such as broccoli, kale etc. It has tender leaves that provide a tangy flavour to the dishes it is added to. Arugula is mostly used in salads, however, we will also mention other recipes associated with it. Before talking about the recipes of arugula, let us shed some light on its health benefits.

Health benefits of arugula

  1. This vegetable is popular amongst the weight-conscious folks as it is low in calories and is high in vitamin B9 (folate), vitamins A and C.
  2. While it is low in calories, it is high in potassium which is important for proper nerve functioning, blood pressure and muscle control.
  3. It also has fair amounts of magnesium and calcium. Magnesium is important in the absorption of calcium and plays a role in bone health and maintenance

Recipe 1

Arugula & Spinach Stir-Fry

This is a very healthy recipe and takes just about 15-20 minutes to make. This contains just 240 calories and 9 gms of fat. Read the recipe below to understand the process.

Start the process by heating 1 Tbsp of oil in a pan and then add 1/2 Tsp od mustard seeds.When they start spluttering add 1 large onion,  3 green chillies, a sprig of curry leaves and fry till this till the onions are slightly brown.

Now, toss in 1 cup of arugula greens, 1 cup chopped spinach leaves, and add salt(to taste) and 2 Tbsp coconut.

After this cover and cook for a few minutes till all the water dries. Your recipe is ready to be served hot!

Recipe 2

Arugula & Melon Salad

This is a pleasant looking salad that is made by combining arugula and melon. This is perfect for the times when your tummy demands a light meal.

Start the process by keeping 3 Tbsps of plain yogurt in a strainer for about fifteen minutes to drain the excess water. The yogurt should be thick in consistency.

To make dressing add 1 tablespoon honey,1 tablespoon ginger juice, 1/8 teaspoon salt and a pinch of black pepper to the thickened yogurt. Mix all the ingredients very well.

After this, add about 4 tablespoons of orange juice to the yoghurt mix as needed to give the dressing a pourable consistency.

Now arrange 2 cups of roughly chopped arugula, 2 cups of melon and 3 finely chopped strawberries in a salad bowl; Pour the dressing over salad. Serve this salad chilled!

Recipe 3

Arugula & Sweet Potato Curry

This tastes amazing when served with rice. This low-calorie dish is very easy to make. Read the recipe below to understand the process.

Start the process by heating 1 Tbsp of oil with 1/2 Tsp mustard seeds and Tbsp of urad dal until mustard starts popping.

Stir in 1 pinch of asafetida, 1/2 Tsp of turmeric,  2 green chiles, and onions with a pinch of salt.
When the onions soften, add 2 medium sized sweet potatoes and mix well; add a little more salt and cook covered about 15 minutes.
Add 1 medium bell pepper, 3-4 cups of arugula and sprinkle 1 Tbsp of sambar powder on the top. Cover and cook until veggies are done; mix well.
 Serve hot with rice, rotis, etc. and your favorite dal for a complete meal.  Enjoy!!
