Recipes of the healthy corn!

Corn or maize is a grain plant that originated in southern Mexico. The kernels of corn hold the majority of its nutrients and are the most commonly consumed parts. They can come in multiple colors, depending on where the corn is grown and what species or variety they happen to be.

Before discussing the recipes of corn, let us also highlight the health benefits that it has to offer.

Health Benefits Of Corn

  1. It has generous amounts of essential minerals such as magnesium, manganese, zinc and iron.
  2.  Corn contains high amounts of antioxidants that fight cancer-causing free radicals.
  3. Corn has a substantial amount of iron and hence prevents anaemia.
  4. It is also a rich source of beta-carotene, meaning it promotes good vision.

Now, that we have discussed the health benefits, it is time to discuss the recipes

Recipe 1

Simmered Corn

Corn stewed in milk, coconut, curd and green chilli paste just tastes amazing. It does not take more than 15 minutes to make. Check out the recipe right here.

Start the process by reserving 200 ml cooking liquid from the corn. Now grind 2 Tbsp of coconut, 4 green chillies, 4 Tbsp of ginger and freshly chopped coriander together.Add to the corn liquid.
Heat 1 Tbsp of oil. Toss in 1 Tsp of mustard seeds and curry leaves (10-12). Add the paste to the pan.
Heat through. Add 1/2 kg cooked corn(sweet corn kernels and baby corn), 125 ml milk and 2 Tbsp of curd.
Cook for 7-10 minutes. Serve hot.

Recipe 2

Bhutteyan Da Kebab

These kebabs look and taste pleasant. The combination of potato, corn, cheese and seasoning makes this dish impossible to resist. Check out the recipe below to understand.

Start the process by grating the corn (2 cups corn kernel)

Now add 1/2 cup potato boiled and grated, 2 Tbsp grated cheddar cheese, 2 chopped green chilli, 2 Tsp chopped ginger, 1/2 Tsp black pepper powder, 1/2 Tsp black pepper, 1/2 tsp white pepper powder, 1/2 tsp garam masala, 1 pinch mace powder , few fresh mint leaves, salt to taste, 3-4 Tsp of refined oil.

Now divide the mixture into equal portions and make barrel-shaped kebabs. After this heat oil in a non-stick pan and shallow fry the kebabs over medium heat until they turn crisp and golden in colour.

Serve with mint chutney.

Recipe 3

Corn & Pomegranate Chaat

In a bowl, add  1/2 cup boiled corn,  1/2 orange

1/2  pomegranate, small bunch of  chopped mint and one halved chopped capsicum. Mix them a;; well together.

Add 3 tbsp tamarind extract, salt to taste, 3 Tbsp mustard sauce, 1 Tsp chaat masala, few boondies, chopped coriander leaves,1/2 tsp cumin powder,  little amount of chili powder and 1/2 lime.

Mix them all well together and your corn and pomegranate chaat is ready to eat.

Recipe 4

Corn & Potato Soup

Take a pot, add butter and 2 chopped onions. Saute and cook it over low heat.

Add 2 – 3 bay leaves and 1 cup corn kernels. Mix this well. Then add 1/2 chopped garlic, 3- 4 rosemary leaves, 1/2 a cup basil leaves, oregano to taste, 1/2 chopped yellow pepper, 2 chopped potatoes,1/2 cup white wine, and water. Boil it for 10 minutes. Once boiled, put it in a blender and blend it well. Then boil the mixture again. Sprinkle1 tsp white pepper, 1 tsp chopped parsley, 1 tsp chopped and chives for garnishing. Serve hot.

Recipe 5

Corn Fritters

In a large bowl, stir together 3 cups of  corn kernels, 1 cup flour, sugar, 1 Tsp baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.

Stir in 2 large eggs and 3/4 cup of heavy cream until the batter is well-combined.

Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoons of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they’re golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.

Serve them with sour cream.

For Hair

Corn oil contains Vitamin E and fatty acids, that keep your hair follicles nourished and hydrated. It also has sufficient amounts of Vitamin K that leads to a proper absorption of calcium by the body thus preventing hair fall.

For Skin

Corn oil improves the functioning and quality of skin due to a high content of Vitamin E and linoleic acid in it.
