So here I am with the recipes of radish leaves. As discussed in the last article, all the parts of radish are super beneficial and edible.
I used to earlier either throw away the leaves of radish or use them as compost, but later I realized that the leaves can be used to create some amazing dishes.
Nutritional Value of Radish Leaves
Radish leaves contain:
- 6 times more Vitamin C than the root
- More calcium than spinach
- High iron content
- Rich in dietary fiber
Recipes
1. Mooli Ke Patte Ki Sabzi
Ingredients:
- 2 bunches radish leaves, chopped
- 1 onion, sliced
- 2 tomatoes, chopped
- Spices: turmeric, red chili, coriander powder
- Salt to taste
Method:
- Wash leaves thoroughly
- Sauté onions until golden
- Add tomatoes and spices
- Add leaves and cook covered
- Serve hot with roti
2. Mooli Patte Ka Paratha
Ingredients:
- Wheat flour
- Chopped radish leaves
- Green chilli, ginger
- Salt, ajwain
Method:
- Knead dough with chopped leaves and spices
- Roll out parathas
- Cook on tawa with ghee
3. Mooli Patte Ki Chutney
Ingredients:
- Radish leaves
- Green chillies
- Garlic
- Lemon juice
- Salt
Method:
Blend all ingredients to make a green chutney.
4. Mooli Patte Ka Raita
Blanched and chopped leaves mixed with yogurt and spices.
5. In Dals
Add chopped radish leaves to any dal for extra nutrition.
Tips
- Use within 2-3 days of purchase
- Wash thoroughly to remove dirt
- Blanching reduces bitterness
- Can be frozen for later use
