Quick Recipes of bok choy

Bok choy is used as a side ingredient in many recipes and it also is the central ingredient around which many recipes build. The reason is its crispy texture, sweet flavour and high amount of nutritional value.

This also is known as white cabbage. Its name is quite unique and is derived from a Chinese word that means soup spoon.

Benefits of Bok Choy

Loaded with vitamins C, A, and K, and excellent sources of calcium, magnesium, potassium, manganese, and iron, bok choy is a champion of nutrition amongst the vegetables. It is also low in sodium content and high on folate.

Below I have compiled a list of some mouth-watering recipes of bok choy that I am sure you would want to include in your diet!

Recipe 1

Bok Choy Poriyal

Start by separating the stalks of the bok choy and wash each stalk thoroughly. Chop both the stalk and the leaves finely. Then heat 1tbsp of oil in a pan, splatter 1/4 tsp of mustard seeds, 6 curry leaves and 1tsp of  urad dal.

Fry the finely chopped onion and green chillies(2-3) for a minute and then add the chopped bok choy. Add salt to taste and let it cook uncovered for about 7-8 minutes until the vegetable wilts. It is a very watery vegetable so releases lot of water.

Add one egg at this stage and mix everything together. Keep mixing for another 1 or 2 minutes until the egg is cooked. Serve with rice or roti.

Recipe 2

Bok Choy Curry

This is one of the curry sauces that’s filled with a creamy, smooth and a spicy taste. And it ranks high in my list of favourite curry sauces!

Start by heating 2tbsp of oil in a medium saucepan and add the chilli flakes(according to taste) , 1/2 tsp of peeled ginger, 2 chopped onions(brown if available) and 2 cloves of garlic. Now stir-fry this mix for about a minute then add 1tsp of cumin powder, 1tsp of turmeric and 1/2 tsp of fennel seeds. After this add 2 washed, chopped and feet removed bok choy and toss properly until they wilts.

Now add a cup of chopped coriander and salt to taste. Cook this slowly and mix 400ml of coconut cream to this. Stir and continue cooking for 10 more minutes until a thick liquid reduces. Squeeze 3-4 lemon wedges over the dish and serve with rice, lentils, chickpeas or even whole grain pasta.

Recipe 3

Bokchoy Fresh Salad

The bok choy packs suitcases full of vitamins, fiber and antioxidants, and it’s water-rich.

To make the dressing, combine all the dressing ingredients(1″ piece fresh ginger, peeled and quartered, 2 medium garlic cloves, 2 Tbsp seasoned or regular rice vinegar, 1 Tbsp hot Chinese mustard, 1 Tbs lemon juice, 1 tsp soy sauce, 1/4 c sesame oil

in a food processor or power blender and puree completely smooth.

Combine all the salad ingredients(1/2 head bok choy, 5 green onions, 3 mini bell peppers, 1 carrot and toss. Top with dressing and 1/4 cup peanuts. Your salad is ready.

Recipe 4

Sesame Bokchoy Salad

To make the dressing, in a small bowl or in a jar with a tight-fitting lid, combine ¼ cup light brown sugar ¼ cup olive oil, 2 tablespoons vinegar, 2 tablespoons sesame seeds, and 1 tablespoon
soy sauce. Allow flavors to blend at room temperature while preparing the rest of the salad.
Meanwhile, heat 2 tablespoons olive oil in a large sauce pan over medium heat until shimmering. Reduce heat to low. Add 1 package ramen noodles and  ¼ cup sliced
almonds; sauté until toasted, about 10 minutes, stirring frequently to avoid scorching.
In a large bowl, combine baby bok choy, 5 spring onions, and mix. Drizzle salad dressing over the top and toss until uniformly combined. Serve at room temperature.

Recipe 5

Boiled Bokchoy

This is for the health conscious people. It is healthy and filling.

Heat the 1 tbsp oil in a large skillet or wok over medium heat, and cook 2 cloves garlic in the hot oil until fragrant, 1 to 2 minutes.

Mix in 8 heads of bok choy, and cook and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent 5 to 8 minutes. Sprinkle with salt to serve.
