Knolkhol is loaded with antioxidants that fight against deadly cancer. The dietary fibre in it maintains the health of your digestive tract. Apart from being rich in antioxidants, this also contains sulphoraphanes and isothiocyanates that stimulate the production of protective enzymes in your body

Let us talk about the recipes of knol khol.

Recipe 1

KnolKhol Khalan Curry

This is an authentic recipe from Kerala and tastes yummy when cooked in fresh coconut and curd. You can devour it with rice and roti.

Now cover the mixture with a lid and cook for about 5 – 10 minutes.

Start the process by peel the skin of the knolkhol(250 gms) and cut it into pieces and soak in water. After this heat some water in a vessel and let it come to a boil Add a little quantity of little turmeric powder(1/4 Tsp), salt to taste, and knolkhol pieces.

Take a mixer grinder and add some freshly grated coconut(2 Tbsp), cumin seeds(1/2 Tsp), green chillies (4) and grind this into a soft paste. Transfer this mixture to a bowl.

After this add one cup of curd to the coconut mixture and mix well.

In a pan, add a little oil and when it gets hot, add mustard seeds(1/2 Tsp), methi seeds(1/4 Tsp), red chillies (3), a pinch of hing and curry leaves(1 spring).

Add the coconut-curd mixture in the pan and mix well. Add the boiled knolkhol pieces and salt. Just bring this to one boil and switch off the flame. Your vegetable is ready to be served hot.

Recipe 2

Knolkhol with chana dal

This is a very filling accompaniment to chana dal and tastes well with rice.

The recipe is very easy.  You should start the procedure by taking washed and soaked chana dal(1/4 cup). Along with this, Peel the skin of the knolkhol(1 big) and wash it thoroughly. Cut it into small cubes.

Then Take the soaked dal and the chopped knolkhol in a pressure cooker. Add some salt(according to taste), water, green chilies(2)  and turmeric powder(1/4 Tsp).

Cook this mixture for 2 whistles and let the pressure release. An alternate way of cooking this mixture is in an open pot.

To give this dish a watery texture, you can add grated coconut (1/4 cup) with some water to obtain a smooth paste. Now heat 2 Tsp of oil in a pan and put in 1Tsp of mustard seeds. For the seasoning add 1 Tsp of urad dal, 1/2 Tsp of fennel seeds,1/2 Tsp of cumin seeds,  2 dry red chilies, few curry leaves and a pinch asafoetida. Fry this mixture for a minute.

Now add the cooked chana dal and knolkhol mixture to this along with the ground coconut and cook everything for about 5 minutes on a medium flame. Switch off the flame, your dish is ready to be served hot.

 

Recipe 3

Knolkhol Adai

This is a yummy recipe that can be prepared in almost no time.

For this, you should start the process by roasting 200 gms of horse gram. After this, grate 200 gms of knolkhol along with heating 1 Tbsp of oil in a pan over a medium flame. Fry 1 Tsp of cumin seeds for about 3o seconds. Add 50 gms of finely chopped onions and 5-6 green chilies to this. Saute this for a minute or two.

Add the grated knolkhol and stir it well. Switch off the flame and add the ground horse gram. Add enough salt and water and mix it well to obtain a thick batter. Heat a dosa tawa over medium flame and pour a ladleful of the mix while spreading evenly.

Apply oil around the edges and cook on both sides until lightly browned. Remove and serve with chutney of choice.
