Interesting recipes of radish leaves

So here I am with the recipes of radish leaves. As discussed in the last article, all the parts of radish are super beneficial and edible. I used to earlier either throw away the leaves of radish or use them as compost, but later I realized that the leaves can be used to create some very delicious recipes.

Recipe 1

Moong Dal With Radish Greens

This recipe is loaded with proteins of pulses and minerals of radish leaves. This is an easy recipe and tastes yummy when served with plain white rice.

To prepare the Moong Dal With Radish Greens recipe, begin by cleaning and washing the moong dal. Soak it in water for 10-15 minutes.

Start cleaning 1 cup of moong dal and then soak it in water for about 10 to 15 minutes. Clean and wash a bunch of radish greens parallelly and finely chop them.

Now add 1 Tsp of cooking oil in a pressure cooker on a medium flame, and add 3 cloves of chopped garlic and 1 inch of grated ginger after it becomes hot. Stir this mix on a low flame till the garlic turns light brown in color.

Add the soaked moong dal along with 1 Tsp of turmeric powder, 1 Tsp of red chili powder, 1 Tsp of mango powder and 2 cups of water.  Stir the mixture properly, cover the lid of the cooker and let the moong dal cook over medium flame for 2 to 3 whistles.Turn off the heat. Allow the pressure to release naturally.

Then turn off the heat and let the pressure release.

Parallelly put the chopped radish greens in a frying pan in 1Tsp of oil, and heat it over a medium flame. Cook till the greens are wilted and cooked properly. Keep this aside.

Once the pressure has released, open the lid of the pressure cooker and gently mash the dal with the back of the spoon. This will help thicken the moong dal.

Now add the cooked radish greens and stir to combine. Check the salt and spice levels and adjust to suit your taste.

The final step is tempering the dal. For this, take a frying pan, and add 1 Tbsp of Ghee on medium flame. After it gets warm add 1 Tsp of cumin seeds. Once the seeds start crackling, add 2 dry chillies and roast this for a few seconds. Turn off the heat and pour the tadka over the dal and stir properly for them to mix well

Serve Moong Dal With Radish Greens hot along with white rice and salad.

Recipe 2

Radish Greens/Mullangi Keerai Poriyal

This is a scrumptious recipe and is loaded with health benefits too. It is easy and you would definitely enjoy cooking it.

Start the process by washing1 1/2 cups of radish greens well, then remove its thick stalk followed by finely chopping it. Take 1/4  cup of grated coconut along with 1/2 Tsp of cumin seeds and keep it aside.(or grind it in the mixie for a second without water) Heat 3 tsp of oil and add1 Tsp of mustard, 1/2 Tsp of urad dal, 2 red chilies (broken into small pieces) and a pinch of heeng. Your seasoning is ready

Now add 1 finely chopped onion and 6 cloves of finely chopped garlic and saute till onions turn transparent.

Add radish greens, needed salt and cook it till it becomes tender. Also, remember to put a lid while cooking. Sprinkle water and stir in between for even cooking.

Now add the mix of grated coconut and cumin seeds to this and combine it well.Serve it as an accompaniment to rice.

This is served best with rice.
