Pumpkins are not just associated with Halloween or Cinderella’s carriage.

 

 

Infact, there is much more to this orange plump plant.

It is good for the heart – The fiber, potassium, and vitamin C content in pumpkin all support heart health.

Reduces the risk of cancer – Pumpkin contains Beta-Carotene, which potentially reduces the risk of prostate and colon cancer.

Combats diabetes – Pumpkin seeds have compounds that can actually battle diabetes.

Enhances Immunity – Pumpkin pulp and seeds are high in both vitamin C and beta-carotene. These are responsible for boosting your immune system along with providing a host of nutrients.

 

Now that we have discussed the health benefits of pumpkin, we will talk about some quick recipes of pumpkin.

Recipe 1

Pumpkin And Potato Vegetable

This is a delightful recipe. Pumpkin and potato laced with flavors of cinnamon, chaat masala, bay leaves and other spices taste nothing but scrumptious. Read the recipe below:-

Start the process by heating 2 Tbsp of ghee; add 1 Tbsp of onions seeds, 1 Tsp of methi seeds,1 Tsp of  mustard seeds, 1 pinch of cinnamon, 3-4 green cardamoms and 2 bay leaves. Stir the mixture till you hear a crackling sound
Now add 1 tsp of coriander powder,1 tsp of cumin powder,1 tsp of turmeric powder, pinch of hing and 1 Tsp of red chilli powder.
After this add 1 finely chopped tomatoes and cook it till it softens.
Now, add 450 gms of pumpkin and450 gms of potatoes with a cup of water. Cover and cook for 15-20 minutes.
Finally, sprinkle 1/2 Tsp of sugar, 1 Tsp of chaat masala and salt.
Mix well and serve hot.

Recipe 2

Baked pumpkin

Freshly baked pumpkin is a delight to have. It tastes even better with chilli and red wine vinegar. Read the recipe to know the process.

Start by pre-heating the oven to 200 degrees and add 1 and 1/2 kg pumpkin to the baking dish.

Now flavour the pumpkin with salt and pepper(according to taste). Then add 5 cloves of garlic by making a small insertion into the pumpkin with each pod.

Add some fresh thyme(a handful of sprigs), 1 Tsp of coriander seeds, 2 Tsp of red wine vinegar, 3 dry red chillies and 1/2 Tsp of chilli powder.Drizzle olive oil and mix it all together. Then put the baking dish into the oven for 30 minutes.

Your baked pumpkin is ready to be served hot.

 

Recipe 3

Pumpkin halwa

This delicious halwa with the flavors of pumpkin and aroma of cinnamon can act as a perfect sweet dish after your dinner. Read the recipe below to know how to make it.

Start the process by place the pumpkin, water and, cinnamon in a saucepan. Cover this properly and cook until the mix turns tender.  Now drain and mash the pumpkin.
In a large pan, heat 4 tbsp of, oil until hot add the pumpkin, stirring, continuously. Now allow the puree to reduce and thicken and darken, for about 10 minutes.
Stir in enough sugar to sweeten. Continue cooking until the halwa reduces into, a deep amber & glossy mixture.
Decorate with raisins, coconut and almonds and serve hot!
