Interesting recipes of the crunchy carrots

Though we already have a section that talks about various recipes of carrots, this blog here is dedicated to some not so common recipes of carrots.

These recipes are quick, healthy and delicious. Isn’t it a wonderful combination?

RECIPE ONE:

Cinnamon Carrot Muffins

These fluffy little muffins are a delight to serve and eat both. They are made from the combination of crunchy nuts and laced with a tinge of cinnamon. The process is very easy. Read below to understand it.

Start the process by rolling 1 cup of assorted nuts in some flour and keep it aside. Now sift 2 cups of all-purpose flour, 2 Tsp baking soda and 2 Tsp cinnamon. To this add 2 cups(480gms) of brown sugar/jaggery, 1 and a half cups of oil and 4 beaten eggs. Mix all the ingredients well.

After this add 3 cups of carrots and nuts. Now put the batter into the pastry cups (not more than 1/2 full) and bake in a pre-heated oven for 15-20 minutes.

Note: The oven temperature should be maintained at 325F-160C

RECIPE TWO:

Healthy Baked Carrot Fries

Eating fries would be a more delightful process if you know that they are low in calories. We will here describe a recipe of fries that you can try without any guilt.

Start the process by preheating oven to 425 degrees.

Now peel and slice carrots (about 900 gms)into french fry shaped pieces (about ½” x ½” x 3”). Toss carrots with olive oil(1Tbsp), salt and pepper. Arrange carrots in a single layer on baking sheet.

After this bake for 10 minutes then flip each carrot fry. Continue to bake until fully cooked and slightly crispy, about an additional 10 minutes. Your carrot french fries are ready!

Serve immediately with your favourite sauce!

RECIPE THREE:

 Carrot Gojju

This is a delicious combination of chana dal & carrots cooked with coconut, jaggery, tamarind and curry leaves. The recipe is really easy.

Start by taking a pan and saute 3 Tbsp of coconut oil, little bit smashed ginger, 4 smashed whole green chilies, 1 Tsp of cumin seeds,  1 Tbsp of coriander seeds, 1 Tbsp of black pepper, 1 Tbsp of chana dal, few coriander leaves, sea salt as per taste and half grated coconut. 
Now pound them in mortar and pestle with a little bit of water.
To prepare the base take a kadai and add 1 Tbsp of coconut oil, 1/2 Tbsp of mustard seeds and few curry leaves. Stir them well together.
After this add the pounded paste into the kadai and Stir all the ingredients well.
Now add little water, 2 Tbsp of tamarind extract and little amount of jaggery. Combine them all well together.
Finally, add 250 gms of sliced carrot and little water and mix all the ingredients together.
Cover it and let them simmer for 10 minutes. Your carrot Gojju is ready to be served hot!
