Interesting recipes of broccoli

Broccoli has gained immense popularity due to its taste.  The rise in consumption of broccoli has been increasing because of its flexibility of usage. It can be used in salads, stir-fries, curries and soups. Its flowers and stalks are edible, whereas the bitter-tasting leaves are discarded. We will discuss the recipes of broccoli in this blog. But before that, we want to shed some light on the health benefits of broccoli.

Health benefits of broccoli

  1. Broccoli may prohibit the growth of breast, uterus, cervical, prostate and skin cancer.
  2. The magnesium, calcium and potassium in broccoli also help regulate blood pressure.
  3. It is beneficial for pregnant women as it contains folic acid, which helps in proper development of the fetus without any defects.
  4. It helps in weight loss as it is low calorie and high fibre.

Now let us talk about the recipes of broccoli

Recipe 1

Broccoli Poriyal

It is a South-Indian preparation laced with freshly grated coconut and an aromatic seasoning.

Wash a bunch of broccoli and finely chop it. Heat 2 Tsp of oil in a kadai, and splutter 1/2 Tsp of mustard seeds. Now add 2 Tbsp of urad dal, 2 dry red chillies and 1 string curry leaves.

Fry this for about a minute till the urad dal turns golden brown. Now add 1/2 finely chopped onion and 1 green chilli. Fry for a minute till the onion turns golden. Now add finely shredded broccoli and required salt.

Stir-fry for about 3-5 minutes. The broccoli will become dark green in color and will be partially cooked.

After this add 2 Tbsp of grated coconut, mix properly and remove from the stove. Broccoli tastes best if it retains its crunchiness, so it is advisable to not overcook it.

Your broccoli poriyal is ready.

Recipe 2

Chatpati Broccoli

This is an easy one. It is a quick mix of broccoli with tamarind, peeper, masalas and curry leaves.

Start the process by heating 2 Tbsps of oil and add 2 Tsp of mustard seeds, 3-4 red peppers, 1/8 Tsp asafoetida and 1 Tsp of cumin. Now, when seeds start to splutter add about 50 gm finely shredded ginger and  2 Tsp of garlic.  Saute this mixture until it turns light brown.

After this add 250gms of broccoli and saute over high heat a few times, then lower the heat, cover and cook until bite like. Finally, add 20gm of tamarind(soaked in 1 cup water and strained) and 2 Tsp of salt, let it come to a boil .

Your chatpati broccoli is ready to be served hot!

 

Recipe 3

Cream Of Broccoli Soup

This soup is Nutritious and thick. Read the recipe to know how to make it.

Start the process by heating 2 Tbsp butter or oil in a heavy saucepan.

When the butter has melted or the oil is steaming, add half the broccoli(out of the total 200gms).Turn around a few times, then lower the heat and continue sautéing for about half a minute. After this add 2 Tbsp sifted flour and turn around till the mixture leaves the sides of the pan.

Now remove from heat, and add the stock very gradually, stirring all the time (thus avoiding lumps). Allow it to cool, and blend in a blender. After this place the pan back over the heat, and add the rest of the broccoli, 3/4 cup of milk, 1/4 tsp black pepper and 1/2 Tsp of celery salt.

Now cook over high heat, stirring a few times, till it comes to a boil and then simmer over low heat for at least 10 minutes. Serve hot garnished with cream.

Recipe 4

Lemon And Garlic Broccoli

Place broccoli florets(450gms) in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.

While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in  garlic and 1 pinch salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with 1 tsp black pepper, toss to combine, and season with a bit more pepper if desired.

Recipe 5

Broccoli And Pepper Stir-Fry

In a large skillet, heat the oil over medium-high heat. Add 1 tablespoon grated fresh ginger and cook until fragrant, 30 seconds.

Add 1 bell pepper,1 bunch of broccoli, and 1 bunch of spring onions and cook, tossing often, until the broccoli is crisp-tender, 3 to 5 minutes.

Add 1/4 cup of hoisin sauce and ¼ cup water and cook, tossing, until tender, 2 to 3 minutes. Sprinkle with the 1 tbsp sesame seeds.

Recipe 6

Broccoli, Orange And Olive Salad

Fill a large saucepan with 1 inch of water and fit with a steamer basket. Bring the water to a boil. Place 1 bunch of broccoli in the basket, cover, and steam until tender, 5 to 7 minutes. Rinse with cold water to cool.

In a large bowl, toss the broccoli with 1/4 cup of olives, 1 orange(pieces) and zest, oil, ½ teaspoon salt, and ¼ teaspoon pepper.
