Recipes Of The Spirited Spring Onion

Marked by a distinct fleshy root bulb and light green leaves spring onions, have a milder taste as compared to their regular onion peers. Along with the root bulb, the greens are also edible and add flavour to most of the recipes. Their flavour is wonderful and they add substantial texture to salads, omelettes, sandwiches, curries, soups, stir fries, and dressings. They can be even used raw in salads. We will talk about the recipes of spring onion, but before that lets talk about its benefits.

Benefits

Spring Onions are a great source of fiber and Vitamin C. They help in maintaining a healthy digestive tract and also provide a shield against the ghastly ovarian cancer and other innumerable cardiovascular diseases.

Recipe 1

Spring Onion Potato Sabzi

This is very easy to make and has a very rich texture along with wonderful taste. Follow the recipe below to make it in your own kitchen!

Start by peeling the potatoes(2 in number) and cutting them into small cubes.  Now cook potatoes in a pressure cooker with 1/2 teaspoon of salt without overcooking it.

Now take a pan that has a deep bottom and add about 2 Tbsps of cooking oil. Add 1 Tsp of Shahi jeera and cook it till spluttering happens. After this, add 4 cloves of finely chopped garlic to it and saute it for a minute or two.

Add the white part of finely chopped spring onion greens(1 cup), and 2 dried red chilies.Saute till onions begin to turn translucent. Add 1 Tsp of red chili powder, 1/2 Tsp of turmeric powder, salt to taste and mix this well.

Now add the finely chopped green spring onions and cook for about 3 to 5 minutes. This should be followed by addition of cooked potatoes. Mix this well and cook it on a low flame for about 5 to 8 minutes till the ingredients mix properly.

Your spring onion potato sabzi is ready to be served hot with phulkas!

Recipe 2

Spring Onion Tomato Chutney

This Chutney will appeal to your sweet and tangy taste buds. Read below to make this easy dish!

Take a bunch of spring onions, rinse it well and chop it finely into small pieces. Now heat a teaspoon of oil in a pan and put together chopped spring onion, chopped onion(1 medium) and garlic(6 to 8 cloves). Saute this mixture until the onions turn translucent in color.

Now add chopped tomatoes(2 large) and green chilies(1-2) and saute the mix until the tomatoes soften
After letting this cool-down, mix everything together into a paste and add salt to taste.

After this heat a teaspoon of oil in a pan and splutter 1 Tsp of mustard seeds and add 1 sprig of curry leaves. Transfer the seasoning into the previous mix

Your lip-smacking chutney is ready!

Recipe 3

Mixed Flour & Spring Onion Crepes

These are packed with health benefits and are extremely light to the tummy. These crispy crepes provide truckloads of energy to our bodies. Read below to know the procedure to make them.

Start with mixing 1 cup of Bajra Flour,1 cup Jowar Flour, 1/2 cup of Rice flour, 2 tablespoons Black Urad Dal,  a tablespoon of Ginger garlic paste, 1 teaspoon of Coriander Powder, 1/2 teaspoon of Turmeric powder (Haldi), salt and chili(according to taste) in a large bowl.

 Add water to this to make a fine0 batter. Make sure the batter is thick and flowy. Now add 1 teaspoon of cumin and 1 cup of finely chopped spring onion leaves and mix well to eliminate mounds.

After this heat, a non-stick flat-bottomed pan and take a ladle full of batter and spread it evenly on the pan. Then, add a few drops of oil from both the sides. Fry this along with flipping on regular intervals.

Mixed Flour & Spring Onion Crepes is ready to be served along with Dhaniya Pudina Chutney and Masala Chai for breakfast!
